DOLMAS RECIPE
This recipe
will teach you how to make Dolmas. It is a quick and easy
recipe to make. This is
a very unique recipe to make as the mixture is wrapped in
grape leaves. The flavours of the lamb, onion, rice,
parsley, dill. mint, pine nuts are just some of the
ingredients that make the taste sensational and then wrapped
in the grape leaf is excellent. Just wait till you serve
this appetizer Dolmas up to your friends they will be in for
a real treat.
Dolmas
Ingredients
1 lemon
1 tsp salt
1/4 tsp pepper
1/3 cup olive oil
1 lb ground Lamb
8 oz grape leaves
2 cups onion minced
4 cups chicken broth
2 Tbs fresh dill chopped
1/4 cup pine nuts roasted
2 Tbs fresh mint finely chopped
1/2 cup long grain rice uncooked
2 Tbs fresh parsley finely chopped
Dolmas
Method
In food processor fitted with
metal blade, chop onion then herbs. Saute onion in olive oil
until translucent. Put in a large bowl with remaining
ingredients except grape leaves and chicken broth and mix
thoroughly. Drain grape leaves and drop into boiling water
for 2 to 4 minutes. Remove from water and separate and dry.
Put 1 tablespoon meat mixture on each leaf and roll. Put any
leftover leaves on bottom of skillet. Place Dolmas in 2
layers in pan. Squeeze lemon over them and cover with layer
of leaves. Cover with chicken stock. Weigh down with
heatproof plate and cover. Simmer about 11/2 hours. Best
served at room temp.
