Abalone in Oyster Sauce
This recipe
will teach you how to make Abalone in Oyster Sauce recipe.
It is a very easy recipe to make.
I did not know what abalones were until I met one of my
friends who used to go diving for abalones. He made me a
meal with abalone and I really enjoyed it and that got me
thinking that I could make abalone all different ways so
here is one of my favourite recipes using abalone. Do not be
put off trying this recipe as I'm sure you will like it and
don't be scared to experiment using abalone all different
ways in recipes.
Abalone
in Oyster Sauce Ingredients
454g can abalone
30g dried mushrooms
4 Tbs oil
6 shallots
1/4 tsp sesame oil
1/2 cucumber
1 red pepper
3 tsp cornflour
1/2 tsp grated green ginger
2 Tbs oyster sauce
1 Tbs white vinegar
1/2 tsp sugar
1 chicken stock cube
1 Tbs dry sherry
2 tsp soy sauce
1/2 cup water
Abalone in Oyster Sauce Method
Open the can of abalone and
tip all the juice out of can. Take the abalone out of can
and put it on a cutting board and slice it into thin slices.
Put hot water into a large saucepan and add the dried
mushrooms to it. Then leave the mushrooms in the hot water
for 15 minutes. Take the mushrooms out of the water and
drain them. Cut the tough stalks out of centre of mushrooms
and thinly slice mushrooms. Slice the shallots diagonally
then slice the pepper in half and take out the seeds and
slice it into thin strips. Peel the skin off the cucumber
and slice it into quarters lengthwise and then take the
seeds out of each piece and slice the cucumber pieces into
strips.
Add 2 tablespoons of oil into
the wok and heat it. Take the abalone and put it into the
wok and stir it around for 1 minute. Take the abalone out of
the wok and keep it warm. In the remaining heated oil in the
wok put the ginger, pepper, mushrooms, cucumber and
shallots. Stir these ingredients for 1 minute in the wok.
Combine the vinegar, sugar, oyster sauce, crumbled stock
cube, soy sauce, water, dry sherry, sesame oil and cornflour
and then add the mixture to the wok. Stir the mixture over
the high heat until the sauce has boiled and gone thick. Put
the abalone into the wok with the other ingredients and heat
it through. Abalone in Oyster Sauce is fantastic served with
rice.
