AMERICAN FRUIT CAKE RECIPE
This recipe of the American
Fruit Cake is a wonderful moist cake. Once your friends have
tasted the American Fruit Cake they will be asking you for
the recipe. This cake is lovely just on its own with a cup
of tea or it is even better with a dab of cream. My dear old
mother used to like the American Fruit Cake with a little
bit of butter spread on it. But what ever way you have it
I'm sure you will enjoy the cake.
American
Fruit Cake Ingredients
6 oz mixed peel
8 oz dates
8 oz seeded raisins
1/4 cup orange juice
4 oz walnuts
1 tsp salt
8 oz glazed cherries
4 oz candied pineapple
1 3/4 cups flour
1 tsp baking powder
1/2 lb butter
1/2 tsp nutmeg
3 Tbs sugar
1/2 cup honey
5 eggs
1 tsp allspice
1/2 tsp ground cloves

Fruit Cake Method
On a
cutting board chop up the raisins, dates and nuts. Chop the
pineapple into bite size pieces and cut the cherries into
quarters. Put them in a bowl and combine them together, add
1/4 cup of the flour over the mixture. Beat the sugar and
butter together and mix to a cream and then add the honey.
Add the eggs one at a time making sure you beat the mixture
well after each egg you add. Add to this mixture the rest of
the flour, spices, baking powder and the salt also mixing in
the orange juice alternately and mix it well. Now add the
fruit and mix it well again. Line an 8 inch cake tin with
two thicknesses of white and two thicknesses of brown paper
having the paper 1 inch above the rim of the tin. Place the
American Fruit Cake in the cake tin and bake it in a slow
oven 275 degrees for about 4 hours.
