ANTIGUAN CHARCOAL BAKED BANANAS RECIPE
We do a lot of camping and
the Antiguan Charcoal Baked Bananas are one of my favourite
foods and so easy to cook. The children and grand children
love cooking food in coals when we are camping. When you use
the rum over the Antiguan Charcoal Baked Bananas the alcohol
is burnt out of it, just thought I would let you know that
so you don't think your giving your young ones alcohol. The
young ones love seeing the flame over the Antiguan Charcoal
Baked Bananas.
Antiguan
Charcoal Baked Bananas Ingredients
6 large ripe bananas, in a
bunch
4 Tbs butter
3 limes, halved
1/2 cup brown sugar
1/2 tsp ground allspice
1/4 cup dark rum, heated in a small pan onside of grill
Antiguan Charcoal Baked Bananas Method
This Caribbean dessert can be
started in leftover coals. Put the bunch of unpeeled bananas
in hot coals. Bake the bananas in the hot coals until they
are black and soft to touch. While the bananas are cooking
heat the butter, brown sugar and spices until they are
bubbling. Everyone can slit there own banana and squeeze
half a lime over it and drizzle the butter sugar mixture on
top. Then the adults should ignite the rum and pour it
flaming over the Antiguan Charcoal Baked Bananas a little at
a time. Keep shaking skillet gently until the flame dies.
