APPLE BREAKFAST LOAF RECIPE
This recipe
will teach you how to make Apple Breakfast Loaf.
Apple Breakfast Loaf is a wonderful sweet bread to enjoy
with your breakfast instead of plain toast. The flavours of
apples and nutmeg in the bread recipe makes the taste
exceptional. Breakfast means to break a fast and what better
way than to enjoy an Apple Breakfast Loaf.

Breakfast Loaf Ingredients
1 3/4 cups water
1 cup whole bran cereal
1/4 cup butter
6 cups all purpose flour
1/3 cup firmly packed light brown sugar
2 cups finely chopped apples
3/4 tsp ground nutmeg
1 1/2 tsp salt
2 packages rapid rise yeast

Breakfast Loaf Method
In a
saucepan on the oven heat the water, bran and butter until
very warm and then let it stand for 5 minutes. Meanwhile in
a large bowl combine 1 cup of the flour, the sugar,
undissolved yeast, salt and nutmeg. Stir bran mixture into
dry ingredients. Next thing is to stir in the apple and
enough remaining flour to make a soft dough. Then on a
lightly floured surface knead until it is smooth about 6 to
8 minutes. Cover the dough and let stand for 10 minutes and
then divide it in half. Lightly flour a surface and roll
each half to a 12 x 7 inch rectangle. From the short end
roll up tightly and pinch seems and ends to seal. On a
greased 8 1/2 x 4 1/2 x 2 1/2 loaf pan place each loaf seam
side down. This loaf is great drizzled with icing.
For the Icing:
Combine 1 cup confectioners sugar and 1 to 2 tablespoons
apple juice concentrate. Beat until smooth.
