APPLE OATMEAL BREAD RECIPE
This recipe
will teach you how to make Apple Oatmeal Bread. It is a
quick and easy recipe to make.
Apple Oatmeal Bread is a delicious bread that I am sure the
whole family will enjoy. The flavours of apples, raisins,
rum, cinnamon and walnuts in the bread recipe makes the
taste sensational. I enjoy this bread recipe sliced with
butter spread on it.

Oatmeal Bread Ingredients
1/3 cup raisins
2 Tbs rum
1 tsp salt
1/4 oz active dry yeast
1/2 cup chopped walnuts
1/3 cup packed brown sugar
1/2 cup warm water
1/4 cup vegetable oil
6 cups bread flour
11/2 cups rolled oats
1/2 tsp ground cinnamon
11/3 cups unsweetened apple juice
1 cup finely chopped unpeeled tart apple
1 egg white mixed with 1 tablespoon water for glaze

Oatmeal Bread Method
In a small bowl combine
raisins and rum and then cover with plastic wrap. Microwave
on high for 30 seconds and let stand 5 minutes. In the large
bowl of your electric mixer dissolve yeast and 1 teaspoon of
the sugar in warm water. Let stand until foamy around 10
minutes. After you do this add the oats, remaining brown
sugar, cinnamon, salt, oil, apple juice and 2 to 2 1/2 cups
of flour. With an electric beater at medium speed beat for 2
minutes and then stir in the raisins, rum, nuts, apples and
enough of the remaining flour till it makes a soft dough.
Lightly flour a surface and turn the dough onto it and knead
for 10 minutes until smooth, if it starts sticking just add
a little flour to it.
Take the bowl and clean and rub it with butter and put the
dough into it turning it to coat all over with butter. Damp
a towel and cover it and let it set in a warm place to rise
until doubled in size, about 1 hour. While it is rising
grease a 2 x 9 x 5 inch loaf pan and sit to one side. After
the hour take the dough and punch it down and then knead it
for 30 seconds and then divide dough in half. Shape the
dough into loaves and place it in the prepared pans and
cover with a dry towel and then let the loaves rise until
doubled in size about 45 minutes.
Preheat oven to 375 degrees then brush the loaves with egg
white glaze. Bake the Apple Oatmeal Bread 35 to 40 minutes
or until bread sounds hollow when tapped on the bottom.
Remove from pans, cool on racks. Makes 2 loaves.
