APRICOT SLICES RECIPE

Apricot Slices.

This recipe will teach you how to make Apricot Slices. It is a quick and easy recipe to make. I really like making slices as I believe they go further and are easier to make. The flavour of the apricots in these slices is just so good. My family love coming to my place when I am cooking as they reckon the aroma of the Apricot Slices cooking and the coffee brewing is just so sensational.

Apricot Slices Ingredients

2 eggs
icing sugar
3 oz water
1/4 tsp salt
1 cup plain flour
1/3 cup plain flour
1/4 cup white sugar
1 tsp vanilla essence
1 1/2 cups cold water
2/3 cup dried apricots
1 cup light brown sugar
1/2 cup chopped walnuts
1/2 level tsp baking powder

Apricot Slices Method

In a saucepan place the apricots and add the water then bring slowly to the boil and cook for 10 minutes then drain and cool the apricots and chop finely. In a bowl sift the cup of flour and rub in the butter then stir in the white sugar. Press this mixture into the bottom of a well greased 8 inch square tin and bake in a moderate oven 350 degrees for 25 minutes.

In a large bowl beat the eggs with the brown sugar until light and creamy. Sift the 1/3 cup flour with the baking powder and salt then add to the creamed mixture beating until combined. Stir in the vanilla, walnuts and the chopped apricots and spread this mixture evenly over the baked layer then put it back in the oven and bake for a further 30 minutes or until the top is dry. Cool in the tin. Dust the top with sifted icing sugar and cut into Apricot Slices.

FRUIT SLICES RECIPE

Fruit Slices.

This recipe will teach you how to make Fruit Slices. It is a quick and easy recipe to make. Now I have to tell you this is my favourite slice as I love the flavours of sultanas, currants, raisins and the cinnamon mixed together with the rest of the ingredients makes the taste of the Fruit Slices absolutely fantastic. I always make these slices when we are going on a trip and I take along a thermos then when we stop for morning tea we have our Fruit Slices and a hot cuppa as it is to expensive to always buy a cuppa and slice along the way and home cooking is much better don't you think.

Fruit Slices Ingredients

For the Filling:
3 oz raisins
1 Tbs sugar
3 oz sultanas
3 oz currants
1 Tbs brandy
1 tsp cinnamon
1 oz melted butter
grated rind of 1/2 lemon

For the Pastry:
1 egg yolk
4 oz butter
1 Tbs sugar
2 cups plain flour
1 Tbs cold water

For the Topping:
1 Tbs butter
1 Tbs plain flour
few chopped nuts
1/4 cup brown sugar

Fruit Slices Method

To make the fruit filling put the fruits through a mincer and add the melted butter, sugar, grated lemon rind, cinnamon and brandy. Sift the 2 cups flour for the pastry and rub in the butter and then add the sugar. Beat the egg yolk with the water and mix into the dry ingredients to make a rather firm dough. Roll out the dough to line a well greased 11 x 7 inch shallow oven tray then fill with the fruit mixture. Combine all the ingredients for the topping in a bowl then sprinkle them over the fruit filling. Bake the Fruit Slices at 375 degrees for about 25 minutes. Take care not to over brown the topping. Cut into slices while still warm.
