APRICOT MOUSSE RECIPE

This recipe will teach you how to make Apricot Mousse. It is a quick and easy recipe to make. This is a fantastic tasting mousse to make. If you can't get fresh apricots you can use dried apricots by soaking them overnight and then cook them in a small ammount of the soaking liquid. Decorate your Apricot Mousse with an apricot half on top and a few flaked almonds or with cream and almonds on top. My daughters really love this recipe as it looks and tastes really exquisit.

Apricot Mousse Ingredients

1/2 pint cream
flaked almonds
4 Tbs cold water
3 eggs separated
3/4 cup castor sugar
1 Tbs apricot brandy
4 1/2 tsp powdered gelatine
1/2 lemon thinly peeled rind and juice
1 lb fresh apricots or 6 oz dried apricots

Apricot Mousse Method

First thing to do is wash the apricots and put them in a pan with 1 tablespoon of the water, lemon peel and 2 ounces of the sugar. Cover and simmer until tender and then discard the lemon peel and apricot stones. Sieve apricot pulp to make about 1/2 pint puree then dissolve gelatine with remaining water in a small bowl over a pan of hot water. In a large bowl over a pan of hot water put the egg yolks, remaining castor sugar and lemon juice then whisk until thick and pale.

Take it off the heat and blend in apricot puree, dissolved gelatine and apricot brandy then leave in a cold place until just beginning to set. Whisk cream in a large bowl until it forms soft peaks then whisk the egg whites in another bowl until stiff. Fold most of the cream and all the egg whites into the apricot mixture then pour into a 2 pint glass dish and leave in a cool place until set. Just before you serve the Apricot Mousse pipe a small swhirl of remaining cream on top and decorate with flaked almonds.
