AVOCADO ICE CREAM RECIPE
Avocado Ice Cream is a very
smooth ice cream recipe. The flavours are exquisit. Avocado
are usually used in salads and on bread, in dips and many
other ways and not to many people realise it can be used in
sweets to. The colour of this ice cream is really
exceptional. I am sure you will enjoy it.

Ice Cream Ingredients
2 eggs separated
1 1/4 cup light cream
2 avocados finely grated
1/3 cup granulated sugar
zest and juice of 1 orange
1 1/4 cups heavy cream whipped

Ice Cream Method
The first
thing to do is put the egg yolks with the sugar in a bowl
and beat until thick. After that put the light cream in a
heavy based saucepan and heat to just below simmering point
then beat into the egg yolks. Rinse the saucepan and return
the mixture and cook over a low heat stirring constantly
until thickened. Put aside to cool stirring occasionally.
Now you have to remove the flesh from the avocados and puree
with the orange zest and juice and put it into a bowl. To
this mixture beat in the cooled custard mixture and fold in
the whipped cream then spoon it into a container and cover
it and put into the freezer and freeze till just becoming
firm and then beat well in a bowl. Whip the egg whites until
stiff but not dry and fold into the avocado mixture then
spoon back into the container and cover it and freeze until
firm. About 30 minutes before serving the Avocado Ice Cream
transfer it to the refrigerator. When serving top each bowl
of ice cream with a cherry.
