BACON TOPPED CHEESE SOUP RECIPE

Topped Cheese Soup Ingredients
1/2 tsp salt
1 cup milk
1/4 tsp black pepper
2 cups half and half
1/3 cup all purpose flour
6 slices bacon chopped
14 oz can clear chicken broth
1/2 cup finely chopped celery
1/2 cup finely chopped carrot
1/2 cup finely chopped onion
1/2 cup finely chopped green pepper
2 cups shredded cheddar cheese

Topped Cheese Soup Method
Place bacon in a 3 qt
microwave casserole dish and cover and microwave on high 9
minutes or until done. Remove bacon with a slotted spoon
reserving the drippings in the casserole and set the bacon
aside. Add the vegetables to the dripping and microwave on
high for 8 minutes or until tender. Now blend in the flour,
salt and pepper and mix well then gradually mix in the half
and half, milk and the chicken broth. Cover and microwave on
high 11 minutes or until thickened and bubbly stirring at 2
minute intervals. Add the cheese, stirring until melted.
Cover the Bacon Topped Cheese Soup and microwave on medium 2
minutes. Top each serving with bacon.
