BAKED CUTLETS SUPREME RECIPE
My family always get together
for a family meal once a month and I have found that they
really enjoy Baked Cutlets Supreme. We usually have chips
and salad with the Baked Cutlets Supreme in the summer
months and when I make them in winter I have vegetables with
them. The bacon adds a wonderful flavour with the Baked
Cutlets Supreme.
Baked
Cutlets Supreme Ingredients
1 small onion
oil for baking
1 Tbs butter
salt and pepper
6 lamb cutlets
seasoned flour
1 Tbs lemon juice
1 tsp mixed herbs
egg and milk glaze
6 thin rashers of bacon
1/4 tsp grated lemon rind
1 Tbs finely chopped parsley
2 cups soft white breadcrumbs
soft white breadcrumbs for covering
brown vegetable gravy for serving

Cutlets Supreme Method
In a
saucepan with a little water place the peeled and chopped
onion and cook until tender and then drain it. Combine the
breadcrumbs, lemon juice, lemon rind, onion, parsley, herbs,
salt, pepper and butter. Take about 1 tablespoonful of this
seasoning and squeeze flat between the hands and mould over
the meaty part on both sides of each cutlet. Put a rasher of
bacon around the seasoning to hold it in place and secure
with a cocktail pick. Dip each cutlet in seasoned flour then
in the glaze and finally in the breadcrumbs. Chill for about
35 minutes. Heat a little oil in a shallow oven dish and
place the cutlets in it and bake at 350 degrees for 35
minutes or until the Baked Cutlets Supreme is tender. Serve
the Baked Cutlets Supreme with brown vegetable gravy. And in
summer serve it with salad and chips.
