BAKED EGGPLANT RECIPE
A lot of people will not cook
eggplant as they don't know how to cook it. Just try this
recipe for the Baked Eggplant and I'm sure you and your
whole family will enjoy it. Instead of having the pita bread
or crackers with the Baked Eggplant it is also really nice
with garlic or herbed bread. My family really like the Baked
Eggplant with the garlic bread so try it and enjoy it. This
is a really fabulous appetizer recipe.
Baked
Eggplant Ingredients
olive oil
1 Tbs olive oil
1 large eggplant
2 tsp lemon juice
1 tsp oregano chopped
1/8 tsp salt and pepper
4 oz feta cheese crumbled
2 Tbs parsley chopped
pita bread or crackers
3 garlic cloves unpeeled
1 large onion peeled and quartered
1 red bell pepper halved and seeded

Eggplant Method
The first
thing to do is preheat the oven to 350 degrees. Cut the
eggplant lengthwise and brush all sides with olive oil.
Place the halves cut side down on a baking sheet. Bake it
for 25 minutes. With the oil brush the onion, garlic and red
pepper and add to the eggplant. Bake 25 minutes longer or
until vegetables are tender. Cool the eggplant mixture and
scoop out the flesh and place in a food processor. Next
thing to do is squeeze garlic pulp from skins, peel red
pepper and add to eggplant along with onion, oregano, lemon
juice, olive oil, salt and pepper. Process but do not puree.
Mix in 3 ounces of the feta cheese. Spoon mixture into a
serving bowl and sprinkle with remaining feta cheese around
the edge of the Baked Eggplant and mound parsley in the
center. Serve the Baked Eggplant with pita bread or
crackers. My family really enjoys this with garlic bread to.
