BEAN STOCK VEGETABLE SOUP RECIPE

vegetables in it. This soup recipe makes a thick hearty
soup. What a wonderful meal to have on a cold winters night.

Stock Vegetable Soup Ingredients
1 onion
4 cloves garlic
1 lb pinto beans
2 qts spring water
1/2 bunch Cilantro
1 lb fresh string beans
1 1/2 cups fresh peas
1 red or green bell pepper
1 1/2 cups zucchini squash
1 1/2 cups fresh corn kernels

Stock Vegetable Soup Method
In a large pot bring the first 4 ingredients to a boil and
then lower heat and put the lid on the pot and simmer until
beans are tender, it takes around 2 hours. Take 1/2 of the
beans and blend until they become a smooth paste and then
return to the pot. Now add the cilantro, string beans, peas,
bell pepper, zucchini squash and corn and simmer the Bean
Stock Vegetable Soup until just tender.
