BEEF STUFFED PEPPERS RECIPE
When you make the Beef
Stuffed Peppers instead of using all green peppers you can
add colour by using the red, green and yellow peppers for
the Beef Stuffed Peppers. I find that my family always eat
two of the Beef Stuffed Peppers each so I make a few when I
make them.
Beef
Stuffed Peppers Ingredients
1/2 tsp salt
1 dsp margarine
1 lb finely minced steak
1/2 cup chopped celery
1 1/2 cups cooked rice
1/4 cup finely chopped onion
6 good sized green peppers
For the Creole Sauce:
1/2 tsp salt
1 tsp sugar
1/4 cup water
1 dsp plain flour
16 oz can tomatoes
1/4 cup chopped onion
1 tsp crushed sweet basil

Peppers Method
Cut the tops from the peppers
and remove the membrane and seeds. Cover the peppers with
boiling salted water and simmer for 5 minutes and then
drain. Melt the butter in a pan and brown the onion then add
the meat and celery and cook stirring well until the meat is
cooked well and then add the rice and the salt. Spoon into
the peppers and place them in an upright position in a deep
casserole. Make the sauce for the Beef Stuffed Peppers by
simmering the tomatoes, onion, salt, sugar and sweet basil
in a saucepan for 10 minutes and then add the flour blended
with cold water. Pour over the peppers and cover and bake in
a moderate oven for about 45 minutes. Uncover and bake the
Beef Stuffed Peppers for a further 15 minutes.
