BLACKBERRY ICE CREAM RECIPE
Blackberry Ice Cream is a
wonderful tasting ice cream recipe. My grand children and
family always like coming to my place as I always have ice
cream made in the freezer and they love all the different
flavours I have made. Their favourite is still the
Blackberry Ice Cream and I always tell my grand children
they are having their vitamin C when they are eating it.
Blackberry Ice Cream Ingredients
sugar
1 cup water
4 cups fresh blackberries
2 1/2 cups whipping cream
Garnishes:
fresh blackberries
fresh mint leaves
Blackberry Ice Cream Method
The fist
thing to do is get your colander ready by lining it with two
layers of dampened cheesecloth and then set it over a large
bowl. Combine the berries and water in medium saucepan and
slowly bring them to the boil. Reduce the heat and simmer
gently until they are soft about 10 minutes. Pour into
cheesecloth lined strainer and let stand until juice has
drained into bowl about 30 minutes. Gently squeeze pulp to
extract remaining juice.
Measure berry juice into heavy medium saucepan and add 1 cup
sugar for each cup juice. Cook over low heat swirling pan
occasionally until sugar dissolves then increase the heat
and boil syrup for 2 minutes longer. Cool completely. Mix 2
1/2 cups of the syrup with the cream. Refrigerate until well
chilled. Process blackberry mixture in ice cream maker
according to manufacturer's instructions the ice cream will
be soft. Freeze in covered container several hours to mellow
flavours. Garnish the Blackberry Ice Cream with fresh
berries and mint leaves.
