BRANDY FRUIT CAKE RECIPE
This Brandy Fruit Cake has
the most wonderful flavour, the tastes of orange, coconut,
pineapple and brandy together are absolutely tantalising.
This is a wonderful cake to make as your christmas cake just
decorate the top with cherries and nuts makes it look
sensational.

Fruit Cake Ingredients
pinch salt
1 egg yolk
6 oz butter
3 eggs, whole
1/2 cup brandy
3 Tbs orange juice
1 cup castor sugar
1 tsp baking powder
2 1/2 cups plain flour
1 cup chopped walnuts
1 cup shredded coconut
1 cup chopped mixed peel
1 cup chopped seeded raisins
1/4 cup chopped candied pineapple

Fruit Cake Method
In a
large bowl add the butter and sugar and cream till light and
fluffy. Beat the whole eggs and the egg yolk slightly then
gradually add to the creamed mixture beating well. Sift the
flour with the baking powder and salt and add to the creamed
mixture alternately with the brandy and orange juice and
then stir in the chopped raisins, peel, walnuts, coconut and
chopped pineapple. Place the mixture into an 8 inch cake tin
which has been lined with 2 thicknesses of white and brown
paper. Bake the Brandy Fruit Cake in slow oven 275 degrees
for 2 1/2 hours.
