BREAKFAST MUFFINS RECIPE

The Breakfast Muffins are a good thing to have on hand when your in a rush or running late in the morning. They are very nourishing and have good fibre in them. Just a little trivia do you know what breakfast means, well it means to break fast after a long night sleep. So why not have Breakfast Muffins.

Breakfast Muffins Ingredients

1 cup milk
2 Tbs currants
1 egg lightly beaten
2 Tbs butter melted
1/3 cup castor sugar
2 Tbs pumpkin seeds
1/2 tsp baking powder
2 Tbs sunflower seeds
1 1/2 cups self raising flour
1/2 cup wholemeal self raising flour

Breakfast Muffins Method

The first thing to do preheat the oven to 200 degrees and coat a 12 hole muffin tray with cooking spray. In a mixing bowl combine the flour and baking powder and then stir through the sugar, currants and sunflower seeds. In a separate bowl combine the milk, egg and melted butter and then into the flour mixture and stir until just combined, the mixture should look lumpy so make sure you do not over beat. Spoon the mixture into the muffin tin then top with pumpkin seeds. Bake the Breakfast Muffins for 20 minutes or until golden and cooked. Leave the muffins in the tin for 5 minutes then cool on wire rack.
