BUMBLEBERRY APPLE PIE RECIPE
The Bumbleberry Apple Pie has
a wonderful array of fruit in it. If there are some berries
you can't get just use some others in there place as it
doesn't really matter what berries you use, but I use these
berries as there the one's I like best for the Bumbleberry
Apple Pie.
Bumbleberry Apple Pie Ingredients
1/3 cup flour
1 1/4 cups sugar
3 Tbs cornstarch
1/2 tsp cinnamon
2 cups rasperries
1 Tbs lemon juice
2 cups blueberries
1 egg slightly beaten
1 1/2 cups cranberries
1 1/2 cups blackberries
1 1/2 cups diced plums
2 1/2 cups diced peeled apples
pastry for 10 inch double pie crust
Bumbleberry Apple Pie Method
The first
thing to do is roll out the pastry and fit it into a 10 inch
pie plate. In a bowl stir together sugar, flour, cornstarch
and cinnamon. In a large saucepan combine apples,
blueberries, rasperries, blackberries, cranberries, plums,
sugar mixture, and lemon juice. Cook over medium heat
stirring occasionally for about 5 minutes or until berries
release juices then remove it from the heat and gently spoon
filling into prepared pie shell and place pastry over top.
Brush crust with egg and put on a baking sheet. Bake the
Bumbleberry Apple Pie at 400 degrees for 15 minutes and then
bake at 350 degrees for about 50 minutes until pastry is
golden brown and filling is bubbling and thickened. Let cool
on rack. Serve with custard or cream.
