BUTTERFLY CAKES RECIPE
The recipe for Butterfly
Cakes has been passed down from one generation to the next.
My grandmother use to cook Butterfly Cakes and my mother
made them then I did and now my children and grandchildren
are making Butterfly Cakes.
Butterfly Cakes Ingredients
4 eggs
1/2 cup milk
1 Tbs castor sugar
1 cup castor sugar
1/2 tsp bicarb soda
120g butter chopped
2 tsp vanilla essence
2 cups self raising flour
300 ml thickened cream
Butterfly Cakes Method
First
thing to do preheat the oven to 210 degrees and line 2 trays
of 12 patty cake pans with paper cases. Place butter, flour,
bicarb soda, sugar, eggs, milk and vanilla into a bowl and
beat for 2 minutes. Spoon this mixture into the paper cases
and bake for 20 minutes or until when a skewer inserted in
the middle comes out clean. Beat cream and sugar until stiff
peaks form. Remove a small section from the middle of the
Butterfly Cakes and cut in half to make the wings. Fill the
Butterfly Cakes with a little cream and top with the wings.
Dust with icing sugar to serve.
