BUTTERNUT SQUASH SOUP RECIPE
This recipe
will teach you how to make Butternut Squash Soup.
The Butternut Squash Soup recipe is very easy to make and
the flavours are sensational. The flavours are quite
different from other soups as you have ginger, curry,
cinnamon and nutmeg plus apple juice in the recipe.
Butternut Squash Soup Ingredients
2 Tbs olive oil
1/8 tsp nutmeg
1/4 tsp cinnamon
2 tsp curry powder
1 Tbs minced ginger
1 cup chopped onion
1 clove garlic minced
3 cups organic apple juice
1 cup carrots peeled and sliced
2 medium butternut squash peeled seeded and cut into chunks
Butternut Squash Soup Method
In a large saucepan over
medium heat cook carrots, onion and garlic in oil until
tender about 5 minutes. Add ginger, curry, cinnamon and
nutmeg and cook for 1 minute. Add squash and apple juice and
heat to a boil. Cover and reduce heat and then simmer for 15
minutes or until squash is tender. In blender puree soup in
batches until smooth. Return the Butternut Squash Soup to
the saucepan and heat through. Serve hot with a hot crusty
bread roll.
