Butterscotch Cream Pie Ingredients
pinch salt
3 oz butter
2 egg yolks
2 1/2 cups milk
1/4 cup cornflour
1 cup brown sugar
1 baked pastry case
1/2 cup dates sliced
1/2 tsp vanilla essence
1/2 cup whipped cream
1/4 cup walnuts chopped
Butterscotch Cream Pie Method
In a bowl
combine egg yolks, brown sugar, cornflour, salt and blend in
half a cup of the cold milk. Heat the remainder of milk with
the butter and when almost boiling pour onto the blended
mixture stirring until smooth. Pour into the saucepan and
cook over medium heat stirring constantly until the mixture
boils and thickens then cook for 2 minutes and remove from
the heat and add the dates and vanilla. Cool this filling
slightly then spread it in the cooked pastry case. When cold
spread with the whipped cream and sprinkle the chopped
walnuts round the edge of the Butterscotch Cream Pie.
