CANTONESE ROAST DUCK RECIPE
This recipe
will teach you how to make Cantonese Roast Duck. It is a
quick and easy recipe to make.
This is the best way I have ever tasted duck. Actually the
Cantonese Roast Duck is the only way I eat duck now. The
flavour is exquisite, there is nothing that taste so good as
sitting down to eat Cantonese Roast Duck
Cantonese Roast Duck Ingredients
5 lb duck
1 scallion
1 Tbs salt
3 slices fresh ginger
Glaze:
2 Tbs water
1 Tbs soy sauce
1 Tbs light corn syrup
few sprigs fresh cilantro for garnish
Cantonese Roast Duck Method
First thing to do is to
remove any excess fat from the duck and rinse and pat dry
with paper towels. Rub the entire surface of the duck inside
and out with the salt then cover and refrigerate for several
hours or overnight. Put the scallion inside the duck and lay
the slices of ginger on top of the duck. In a large
flameproof roasting pan with a lid add 2 inches of water and
put it on the stove. Put a large rack in the roasting pan
and bring the water to a boil. Take a large oval casserole
dish one that will hold the duck but will fit in the
roasting pan then place the duck in the casserole and then
put the casserole on the rack. Cover and steam for 1 hour
checking the water level from time to time and adding more
boiling water if necessary.
When the duck has cooked remove it from the casserole dish
and place it on a rack to dry. In a small saucepan combine
the ingredients for the glaze and bring to a boil then with
a pastry brush paint the hot glaze over the surface of the
duck. Allow the duck to dry for 1 hour. Preheat the oven to
375 degrees and then put the roast duck breast side down in
the oven and roast for 20 minutes. Turn over and continue to
roast for 40 minutes. Transfer the Cantonese Roast Duck to a
chopping board and allow to cool slightly. Using a cleaver
disjoint and cut the Cantonese Roast Duck through the bone
into bite size pieces. Arrange the Cantonese Roast Duck
pieces on a serving platter and garnish with cilantro and
serve.
