CARROT LEEK SOUP RECIPE
This recipe

Carrot Leek Soup has a wonderful blend of carrots, leeks,
chicken stock, ginger and cayenne pepper in it. This soup
recipe makes a great soup for a cold winters night.

dash cayenne pepper
6 carrots thinly sliced
1 tsp grated fresh ginger
garnish with minced parsley
3 cups chicken stock divided
1 cup sliced leeks white part only

Leek Soup Method
In a large saucepan heat 1
cup stock. Add leeks, ginger and carrot and cook over medium
heat until leeks are tender then cover and let simmer until
carrots are tender. Transfer the mixture into a blender and
blend until pureed then return the Carrot Leek Soup to the
saucepan and add remaining stock and pepper. Bring to a boil
and lower the heat and simmer for 3 minutes. Garnish with
parsley.
