CHERRY COCONUT BISCUITS RECIPE

1 egg yolk
4 oz butter
2 Tbs coconut
1 cup plain flour
1 1/2 Tbs icing sugar
1 oz chopped cherries
1/2 tsp vanilla essence

Beat the butter and icing
sugar to a soft cream and then add vanilla, egg yolk, flour
and salt then stir until smooth then add the coconut and
cherries. Turn onto a lightly floured board and knead
slightly to make smooth on the outside.Shape into one long
roll about 1 1/2 inches in diameter. Wrap in greased proof
paper and place in the refrigerator to chill. Cut the Cherry
Coconut Biscuits into 1/4 inch slices and place on a greased
biscuit tray and bake for 15 minutes in a moderate oven, 350
degrees. Serve your Cherry Coconut Biscuits with a great cup
of coffee for afternoon tea.
