CHILLED CHEESECAKE RECIPE
This recipe
will teach you how to make Chilled Cheesecake. It is a quick
and easy recipe to make. This is an absolutely fantastic
cheesecake to make the flavour is sensational. You can
decorate this cheesecake and make it special for a birthday
or for a special occasion. I made it for my grandaughters
graduation party and decorated it so special that she really
admired it and was telling her friends that her grandmother
made it.

Cheesecake Ingredients
2 lemons
1/4 pint cream
3 eggs separated
4 oz castor sugar
4 Tbs cold water
1 oz brown sugar
2 oz butter melted
4 1/2 tsp powdered gelatine
12 oz cottage cheese sieved
1/4 pint cream lightly whipped
10 plain sweet biscuits crushed

Cheesecake Method
The first thing to do is
butter an 8 inch deep cake tin and line first the sides and
then the base with greaseproof paper. In a large bowl mix
the cottage cheese with 1/4 pint cream. Dissole the gelatine
with water in a small bowl placed over a pan of simmering
water. In another large bowl over a pan of simmering water
place the lemon juice and rind, egg yolks and sugar then
whisk until thick and foamy, then remove from the heat and
whisk until cool.
Blend together the egg yolk mixture and the gelatine and
cottage cheese mixture. Leave until thick but not set then
fold in the whisked egg whites and whipped cream then turn
into prepared tin and chill until set. In a bowl mix
together the crushed biscuits, brown sugar and butter then
sprinkle over cheesecake and press down lightly then chill
until firm. Turn the Chilled Cheesecake out on a 10 inch
plate and remove the paper. Decorate the cheesecake with
what you prefer, grated chocolate or redcurrants, grapes or
make it special with flowers.
