CHILLED LEMON PIE RECIPE

This recipe will teach you how to make Chilled Lemon Pie. It is a quick and easy recipe to make. This is an absolutely wonderful tasting lemon pie recipe my whole family really love it when I make this pie for dessert when they come over for our family meal. I usually decorate it with cream and for something special I put some crystallised lemon slices at the side of the cream. My husband and I just have it plain when there is just the two of us as we are watching our weight and we believe the pie is quite sweet enough.

Chilled Lemon Pie Ingredients

For the pie case:
2 oz butter
4 oz sweet plain biscuits

For the filling:
2 lemons
!/4 pint cream
7 oz can condensed milk

For the topping:
Whipped cream
crystallised lemon slices


Chilled Lemon Pie Method

The first thing to do is crush the sweet biscuits with a rolling pin then in a saucepan melt the butter then blend in biscuit crumbs and mix well. Turn the mixture into a pie plate and press into the base and sides of plate with the back of a spoon. Bake in a slow oven for 9 minutes then remove from the oven and let cool in the plate. Next make the filling by mixing together the cream, condensed milk and finely grated lemon rind then slowly beat in lemon juice. Pour the mixture into the pie plate and chill for several hours until firm. Decorate the Chilled Lemon Pie with a whirl of whipped cream and the crystallised lemon slices just before serving.
