COCONUT MERINGUE SLICE RECIPE

This recipe will teach you how to make Coconut Meringue Slice. It is a quick and easy recipe to make. This is a great slice if you like the taste of coconut and meringue. I like to make the Coconut Meringue Slice for my grand daughter as she really loves the taste of it. My husband really enjoys it as it has sweetened condensed milk in it.

Coconut Meringue Slice Ingredients

90g butter
1/3 cup cornflour
2 eggs separated
3/4 cup plain flour
2 Tbs castor sugar
1/2 cup lemon juice
1/2 cup flaked coconut

2 tsp grated lemon rind
1/4 cup castor sugar extra
1/2 cup desiccated coconut
400g can sweetened condensed milk

Coconut Meringue Slice Method

Grease a 19cm x 29cm lamington pan then line the base with grease paper. In a small bowl cream the butter and sugar with an electric mixer then gradually add the sifted flour and cornflour and then turn onto lightly floured surface and knead for 5 minutes. Spread evenly over the base of prepared pan. Bake in a moderate oven for 15 minutes or until lightly browned.

Combine the condensed milk, egg yolks, lemon rind and juice in a bowl and then pour over the base and bake a further 10 minutes. Beat the egg whites in a small bowl until soft peaks form then gradually add extra sugar and beat until dissolved. Now add the desiccated coconut and then spread it over the filling and sprinkle with flaked coconut and bake a further 10 minutes or until golden brown. Cool the Coconut Meringue Slice in the pan before cutting.
