COD AND TOMATO CASSEROLE RECIPE
This recipe
will teach you how to make Cod and Tomato Casserole. It is a
quick and easy recipe to make. This recipe is for fish
lovers as it is a wonderful blend of cod, tomatoes, onion,
garlic, parsley, thyme, basil with vinegar and sugar,
butter, salt and pepper. When I make this dish I put some
cheese over the top as my husband loves cheese on his Cod
and Tomato Casserole.
Cod and
Tomato Casserole Ingredients
butter
1 tsp sugar
salt and pepper
1/2 lb cod steaks
1/4 tsp dried basil
1/4 tsp dried thyme
1 clove garlic minced
1 tsp chopped parsley
1 onion finely chopped
1 lb tomatoes peeled and chopped
4 Tbs wine vinegar mixed with 3/4 cup water
Cod and
Tomato Casserole Method
In a buttered casserole place
the cod steaks and sprinkle with salt and pepper then add
the tomatoes, onion, garlic and herbs. Add sufficient
vinegar and water mixture to come halfway up the cutlets.
Cover and cook in a preheated moderate oven for 35 minutes.
Strain the liquid from the casserole into a small pan and
add the sugar and boil briskly to reduce by half. Pour over
the fish and serve. I like to put cheese on top of my Cod
and Tomato Casserole.
