CRISP SKIN CHICKEN RECIPE
Crip Skin Chicken is a
wonderful way of doing crisp chicken. The flavour of the
sauce you brush over the chicken is so very tasty especially
when you deep fry it. And then cook some noodles and have
the Crisp Skin Chicken over the top of them makes this meal
just so sensational.

Skin Chicken Ingredients
1 tsp
salt
2 Tbs honey
1 Tbs sherry
1 Tbs vinegar
1 tsp molasses
2 1/2 lb chicken
2 Tbs soy sauce
2 Tbs all purpose flour
peanut oil for deep frying

Skin Chicken Method
Put the chicken in a large
saucepan and add boiling water to come halfway up the sides
of the chicken. Cover tightly and simmer until just tender
about 45 minutes. Drain and rinse under cold water and dry
with paper towels. In a screw top jar mix together the
vinegar, soy sauce, honey, sherry and molasses. Brush this
all over the chicken and then hang the chicken in an airy
place to dry for about 30 minutes.
Brush with the remaining soy
sauce mixture again and hang for another 20 minutes more.
Mix the flour and salt together and rub well into the skin
of the chicken. Fry the Crisp Skin Chicken in deep hot
peanut oil until golden and crisp. Drain the Crisp Skin
Chicken well on absorbent paper towels and then serve over
soft noodles.
