DATE SLICE RECIPE

This recipe will teach you how to make Date Slice. It is a quick and easy recipe to make. My husband really loves anything with dates in them so you can imagine his delight when I made my mothers recipe of Date Slice. It has been passed down our generations and all our family make it from my daughters to my grandchildren. Great served with custard or whipped cream.

Date Slice Ingredients

155g butter
1/3 cup milk
1 Tbs honey
1 egg lightly beaten
1 1/2 cups plain flour
1 1/4 cups self raising flour

Filling:
3/4 cup water
2 Tbs lemon juice
500g dates chopped
2 Tbs grated lemon rind


Date Slice Method

Grease a 19cm x 29cm lamington pan. In a bowl sift the dry ingredients and rub in the butter then add enough combined honey, egg and milk to make the ingredients cling together. Knead gently on lightly floured surface until smooth then cover and refrigerate for 30 minutes. Then divide the dough in half and roll half large enough to cover base of prepared pan. Spread with the cold filling and cover with remaining rolled out pastry. Glaze with a little extra milk and sprinkle with sugar. Bake the Date Slice in a moderately hot oven for about 20 minutes then let it cool in pan before cutting.

Filling: Combine all ingredients in a saucepan and cook stirring constantly until mixture is thick and smooth then cool at room temperature.
