FRUIT COBBLER RECIPE
This recipe
will teach you how to make Fruit Cobbler. It is a quick and
easy recipe to make.
Fruit Cobbler is particularly good with strawberries and
rhubarb but you can use any fruit combo you like about 680g
of any type of fruit should do it. I really like this recipe
as I love the mixture of fruit I put in it. My husband loves
ice cream with his Fruit Cobbler but I prefer whipped cream
but either one tastes really good with it.

Cobbler Ingredients
For the
fruit:
5 Tbs sugar
1 stick rhubarb
1 pint blueberries
1 pint raspberries
1 pint blackberries
glug balsamic vinegar
2 apricots stoned and sliced
1 pear cored and thickly sliced
For the topping:
2 1/2 oz sugar
large pinch salt
4 oz butter chilled
8 oz self raising flour
little sugar for dusting
4 1/2 fluid oz buttermilk
vanilla ice cream as an accompaniment

Cobbler Method
Preheat the oven to 375
degrees. Put the fruit into a pan with the sugar and the
balsamic vinegar then put the pan over the heat and cook
gently until the juices begin to run from the berries. Pour
into an ovenproof dish. Meanwhile make the topping by
rubbing the cold butter into the flour until the mixture
resembles fine bread crumbs then add the sugar and salt and
stir well then add the buttermilk to form a loose, scone
type mixture. Roll balls of the dough and place randomly
over the hot fruit. Sprinkle with a little sugar and bake in
the oven for 30 minutes until golden brown. Serve the Fruit
Cobbler with vanilla ice cream.
