HAM AND POTATO CAKES WITH TOMATOES RECIPE
This recipe

Ham and Potato Cakes with Tomatoes is a fantastic breakfast
recipe. I like doing a special breakfast on the week ends
and this is one of my favourites. The flavours of ham,
potatoes, chives and parsley give these cakes a wonderful
taste.
Ham and
Potato Cakes with Tomatoes Ingredients
1 egg beaten
4 tomatoes halved
2 slices ham diced
3 potatoes with skin
1 1/2 Tbs fresh parsley
1 1/2 Tbs fresh chives chopped
Ham and
Potato Cakes with Tomatoes Method
Put the potatoes in a
microwave bowl and add about 2 ounces of water put the lid
on and steam them in the microwave on high for around 5
minutes. When cooked drain and set aside to cool. Gently
Peel the skin off and coarsely grate them into a bowl.
Combine the potatoes, ham, egg and herbs. Divide the mixture
into 12 portions and shape into rounds. With cooking spray
coat a flat pan and heat and add the potato cakes. Cook for
3 minutes on each side until golden and keep warm. Heat your
grill up and cook the tomatoes until lightly browned. Serve
with the ham and potato cakes. These Ham and Potato Cakes
with Tomatoes can also be served on hot buttered toast.
