HARVEST CASSEROLE RECIPE
This recipe
will teach you how to make Harvest Casserole. It is a quick
and easy recipe to make. This recipe has a wonderful
combination of onions, red peppers, marrows, mushrooms,
belly pork, green olives, stock cube, garlic salt, tomato
paste, salt and pepper when all mixed together makes this
fantastic tasting Harvest Casserole. My family all like this
meal cooked up on a cold winters night and served with hot
bread rolls.

Casserole Ingredients
2 onions
2 oz lard
garlic salt
1 lb baby marrows
1 Tbs tomato paste
1 lb belly pork diced
1/4 cup green olives
2 sweet red peppers
1/2 chicken stock cube
salt and pepper to taste
3 mushrooms peeled and chopped
Harvest
Casserole Method
Peel and slice the onions then
melt the lard in a large saucepan and fry them for 5 minutes
and keep the saucepan covered so onions remain soft. Remove
the seeds and stalks from the 2 peppers and then chop them.
Wash and cut up unskinned marrow into small pieces and add
these with the pork and mushrooms to the saucepan then stir
well and season to taste. Mix the tomato paste with the
stock and add to the saucepan. Cover the saucepan with lid
and simmer for 1 hour. Garnish the Harvest Casserole with
the green olives. Serve with hot crunchy bread rolls.
