LAMB GUARD OF HONOUR RECIPE

This recipe will teach you how to make Lamb Guard of Honour. It is a quick and easy recipe to make. This is a wonderful way of doing lamb it just doesn't taste good but looks really supurb to. I like making this meal when I am having visitors over as they are amazed at how it looks and then when they taste it they are amazed at how the taste is so fantastic. Served with lovely roast potatoes just sets it of magnificent.

Lamb Guard of Honour Ingredients

few sprigs parsley
few cocktail cherries
2 Tbs melted dripping
1 lb potatoes peeled and halved
2 matching joints best end neck of lamb

Lamb Guard of Honour Method

Preheat oven to 350 degrees. Ask the butcher to chine the joints and remove the surplus fat and skin from around the ends of the rib bones so that the bones protrude 1 inch. Place the two joints on end in the roasting pan and close together so that the bone tips cross each other like swords then surround with potatoes. Roast in a moderate oven for about 1 1/4 hours. To serve the Lamb Guard of Honour take the joints just as they are from the roasting pan and stand on a serving dish then surround with the potatoes placing sprigs of parsley between. Decorate the tips of the bones alternately with cutlet frills and cocktail cherries.
