LEMON CHICKEN RECIPE
This recipe
will teach you how to make Lemon Chicken. It is a quick and
easy recipe to make.
Lemon Chicken served with a bowl of fried rice is an
excellent chinese meal to serve. The flavours of the
chicken, shallots and the sauce gives this recipe an
exceptional taste.
Lemon
Chicken Ingredients
6 shallots
3 Tbs water
4 egg yolks
salt and pepper
1/2 cup cornflour
oil for deep frying
4 whole chicken breasts
Lemon Sauce:
2 Tbs honey
2 Tbs cornflour
1 3/4 cups water
1/2 cup lemon juice
2 1/2 tbs brown sugar
2 chicken stock cubes
1 tsp grated green ginger

Chicken Method
Sauce:
Combine lemon juice, crumbled stock cubes, cornflour, honey,
brown sugar, ginger and water in a saucepan then stir over
low heat until sauce boils and thickens.
Remove skin from chicken breasts carefully and then remove
bone giving 8 individual pieces. Pound chicken breasts out
lightly. Put cornflour into a bowl and gradually add the
water and lightly beaten egg yolks and salt and pepper then
mix well. Dip chicken breasts into batter and drain well.
Put a few pieces of chicken into deep hot oil and fry till
lightly golden brown and cooked through. Drain on absorbent
paper. Keep warm while cooking remaining chicken. Slice each
cooked chicken breast across into 3 or 4 pieces. Arrange the
Lemon Chicken on a serving plate and sprinkle chopped
shallots over it and then spoon the hot sauce over it.
