LEMON SLICE RECIPE
This recipe
will teach you how to make Lemon Slice. It is a quick and
easy recipe to make. This is a wonderful tasting slice with
the flavour of a biscuit and pecan nut base then covered in
a lemon filling and topped with a passionfruit topping which
makes the whole slice taste absolutely fantastic.

Slice Ingredients
90g melted butter
1 cup sweet biscuit crumbs
1/2 cup finely chopped pecan nuts
Filling:
1/4 cup lemon juice
2 tsp grated lemon rind
250g packet cream cheese
1/2 cup sweetened condensed milk
Topping:
1 Tbs gelatine
3/4 cup water
1 cup castor sugar
yellow food colouring
1/4 cup passionfruit pulp

Slice Method
Grease a 19cm x 29cm lamington
pan. In a bowl combine biscuits, pecans and butter and mix
well then press evenly into prepared pan and refrigerate for
30 minutes. Pour filling over base and refrigerate until
firm then pour topping over filling and refrigerate until
firm. Serve the Lemon Slice with extra passionfruit if
desired.
Filling: Beat cream cheese in a small bowl with an
electric beater until smooth then beat in milk, lemon rind
and juice.
Topping: In a saucepan combine gelatine, water and
sugar then stir constantly over low heat without boiling
until gelatine and sugar are dissolved. Bring to the boil
then reduce heat and simmer gently uncovered for 5 minutes
without stirring. Place mixture into a large bowl and cool
to room temperature then beat with electric beater on high
speed until thick then stir in passionfruit and a little
colouring.
