LEMON SOUFFLE RECIPE
This recipe
will teach you how to make Lemon Souffle. It is a quick and
easy recipe to make. This is a wonderful tantalising dessert
to make. My family really love this dessert and when my
grandchildren come over I put grated chocolate on the Lemon
Souffle instead of the nuts.
Lemon
Souffle Ingredients
1/4 pint cream
3 Tbs hot water
3/4 cup castor sugar
3 large eggs separated
4 1/2 tsp powdered gelatine
3 lemons grated rind and juice
For the Decoration:
whipped cream
Pistachio nuts chopped

Souffle Method
The first thing you have to do
is to cut a piece of greasproof paper long enough to go
around the outside of a 1 1/4 pint souffle dish and about 2
inches deeper than the dish. Tie this around the outside to
form a collar. In a bowl over a pan of hot water add finely
grated lemon rind, juice, egg yolks and sugar then whisk
until just beginning to thicken. Dissolve gelatine in hot
water in a small bowl and when it has dissolved stir into
lemon mixture then leave the mixture in a cold place until
just beginning to set.
Put the cream into a bowl and whisk until it forms soft
peaks then fold into the mixture then whisk the egg whites
stifly and fold into mixture. Turn the souffle into the
prepared dish and leave in a cold place to set. Just before
serving remove paper carefully. To decorate the Lemon
Souffle pipe a little cream around the edge and decorate
with the pistachio nuts.
