LENTILSHEPHERDS PIE RECIPE
This recipe
will teach you how to make Lentil Shepherds Pie. It is a
quick and easy recipe to make. What a wonderful tasting
vegetarian shepherds pie this is. The flavours of the
lentils, onion, garlic, tomatoes, vegetable stock, red wine,
carrot, peas, parsley goes into making this pie so tasty and
then top it with potato and it is really sensational.

Shepherds Pie Ingredients
40g butter
1 cup water
2/3 cup red lentils
2 Tbs tomato paste
1/3 cup dry red wine
1 clove crushed garlic
1 cup vegetable stock
1 onion chopped finely
1 carrot chopped finely
800g potatoes quartered
415g can crushed tomatoes
1/2 cup frozen peas thawed
1/3 cup coarsely chopped fresh flat leaf parsely

Shepherds Pie Method
First thing to do is preheat
the oven to hot. Steam potatoes until tender then drain.
Mash in a large bowl with half of the butter. Melt remaining
butter in medium deep frying pan and cook the onion and
garlic. Stir until onion softens then add undrained
tomatoes, stock, water, paste, wine, lentils and carrot and
bring them to the boil then reduce heat and simmer uncovered
for 15 minutes stirring occasionally. Add peas and parsely
keep cooking uncovered for another 5 minutes. Spoon the
lentil mixture into a shallow 4 cup ovenproof dish. Spread
the mash potatoes on top and bake the Lentil Shepherds Pie
uncovered in the hot oven for 20 minutes. Let pie stand for
10 minutes before serving.
