LIONS HEAD RECIPE

This recipe will teach you how to make Lions Head. It is a quick and easy recipe to make. Lions Head what a wonderful name for such a great recipe. This is the most fantastic recipe, it doesn't just taste good but looks good to served up on a beautiful serving dish. The flavours of pork, ginger, scallion, sherry, soy sauce, chicken stock and bok choy are some of the ingredients that go into making this an exceptional tasting meal.

Lions Head Ingredients

6 Tbs oil
1 tsp salt
1 Tbs sherry
1/2 tsp sugar
1 slice ginger
1/2 cup water
1 lb ground pork
1 Tbs cornstarch
3 Tbs light soy sauce
1/2 cup chicken stock
1 scallion cut into fourths
1 lb bok choy cut into 3 inch lengths
2 Tbs cornstarch dissolved in 4 Tbs water

Lions Head Method

Pound ginger and scallion with a cleaver then put it in a bowl with water and set aside for 10 minutes. Strain out scallion and ginger from the water. Put pork in a bowl and add scallion, ginger water, sherry, 1 tablespoon of soy sauce, 1/2 teaspoon of salt and cornstarch. Mix well with hand in one direction. Form meat mixture into 4 large balls. Using your hands lightly coat balls with dissolved cornstarch. Heat 4 tablespoons of oil in wok and fry the balls one at a time until they are brown. Baste with hot oil and remove carefully. Heat 2 tablespoons of oil until smoking hot in wok then stir fry the bok choy for 2 minutes then add 1/2 teaspoon salt then put the bok choy into a heavy pot and place the meatballs on top. Add 2 tablespoons soy sauce and stock then cover and simmer for 1 hour. Add sugar and bring to the boil for 2 minutes. If the gravy is too watery thicken with a little dissolved cornstarch. Enjoy your Lions Head.
