PINEAPPLE SLICE RECIPE
This recipe
will teach you how to make Pineapple Slice. It is a quick
and easy recipe to make. This is the most tastiest Pineapple
Slice I have ever tasted. My mother used to make this slice
for me and the flavour of the pineapple in it was truelly
exceptional. A must for you to make if you are like me and
love pineapple.
Pineapple Slice Ingredients
90g melted butter
1 tsp ground cinnamon
2 cups sweet biscuit crumbs
Topping:
1 Tbs gelatine
1 Tbs lemon juice
1/4 cup castor sugar
1/4 cup crushed nuts
1 cup cottage cheese
200g carton sour cream
450g can crushed pineapple
Pineapple Slice Method
First thing to do is to
prepare a 19cm x 29cm lamington pan by greasing it. Combine
the biscuits, butter and cinnamon in a bowl and reserve
quarter cup crumbs for topping. Press the remaining crumbs
evenly into prepared pan and refrigerate for 30 minutes then
pour the topping over the base and sprinkle with reserved
crumbs and crushed nuts then refrigerate the Pineapple Slice
until firm then cut into slices.
Topping: Drain pineapple and reserve half cup of
syrup. Combine syrup, gelatine and sugar in a saucepan and
stir constantly over heat without boiling until gelatine and
sugar are dissolved then cool. Push cottage cheese through a
sieve into a bowl then stir in the lemon juice, pineapple,
sour cream and gelatine mixture.
