a quick and easy recipe to make.
I really believe this is the most nourishing meal. The
flavours of the chops, butter, onion, celery, breadcrumbs,
salt and pepper, chopped parsley and topped with fried apple
rings. My family really love this Pork Chop Loaf especially
served with boiled new potatoes.
Pork Chop Loaf Ingredients
1 oz butter
3/4 tsp salt
6 pork chops
1/2 tsp pepper
fried apple rings
3 Tbs chopped parsley
3/4 cup chopped celery
3/4 cup chopped onions
3 cups soft white breadcrumbs
Pork
Chop Loaf Method
First thing to do is remove
the rind from the chops and if they are very fatty trim some
of the fat off. Heat the butter in a frying pan and cook the
chops until light brown on each side then lift them out and
brown the onion and celery in the same frying pan. Combine
the breadcrumbs with the salt, pepper and chopped parsley
then add the onion and celery. Put a chop at each end of a
loaf tin fat side up then place some stuffing alongside it
in the tin. Alternately place chops and stuffing in this way
in the tin then run a skewer through the chops to keep them
together with the stuffing. Bake in a moderate 350 degree
oven for about 1 1/2 hours or until the chops are tender.
Could take a bit longer if they are thick chops. To serve
the Pork Chop Loaf garnish with rings of fried apple.

freshly made Pork Chop Loaf!
