PORK AND CHICKEN WITH BLACK BEAN SAUCE RECIPE

Chicken With Black Bean Sauce Ingredients
2 shallots
1 tsp sugar
3 pork fillets
3 egg whites
1 clove garlic
2/3 cup water
1 Tbs dry sherry
1 tsp sesame oil
1/2 green pepper
oil for deep frying
2 chicken breasts
1 1/2 Tbs cornflour
1 Tbs oyster sauce
2 tsp cornflour extra
1 1/2 Tbs soy sauce
1 chicken stock cube
5cm piece green ginger
1 tsp chinese chili sauce
2 Tbs canned black beans
Pork And
Chicken With Black Bean Sauce Method
First thing to do is remove
the skin from chicken and cut meat from breast bone then cut
chicken and pork into thin strips. In a bowl combine the
cornflour and egg whites and mix well then add pork and
chicken strips a few at a time and then stir to coat meat
completely. Heat the oil in the wok and cook the meat a few
pieces at a time until golden brown and cooked through.
Remove the meat from wok and drain it well. Repeat until all
meat is cooked.
Soak the black beans for 30 minutes and then rinse and drain
them well. Into a blender put the black beans, garlic,
grated green ginger, chili sauce, sesame oil, soy sauce,
sherry, oyster sauce and sugar and blend at medium speed
till smooth. Drain oil from pan and add the black bean
mixture then stir over gentle heat until mixture boils. Stir
in combined water the crumbled stock cubes and extra
cornflour then stir until sauce boils and thickens. Add pork
and chicken and toss them in the pan to coat meat and allow
to heat through. Sprinkle the Pork And Chicken With Black
Bean Sauce with finely cut shallots and seeded and finely
cut green pepper.
