ROYAL SEAFOOD CASSEROLE RECIPE

Seafood Casserole Ingredients
1/2 tsp
salt
6 cups water
1/3 cup butter
2 1/2 Tbs dry sherry
2/3 cup chicken broth
2 Tbs slivered almonds
2/3 cup whipping cream
7 oz package vermicelli
1/3 cup all purpose flour
1/8 tsp ground white pepper
1 1/2 lb unpeeled fresh shrimp
4 oz jar diced pimento drained
2 Tbs grated parmesan cheese
3/4 cup shredded swiss cheese

Seafood Casserole Method
In a large pot bring the water
to a boil and then add the shrimp and cook 5 minutes. Drain
well and rinse shrimp with cold water then peel and devein
shrimp and set aside. Cook vermicelli according to package
directions then drain well and set aside. Melt butter in a
heavy saucepan over low heat then add flour stirring until
smooth and cook 1 minute stirring constantly. Gradually add
broth and cream and cook over medium heat stirring
constantly until mixture is thickened and bubbly.
Add swiss cheese, sherry, salt and pepper stirring until
cheese melts. Remove from heat then add shrimp, vermicelli
and pimento stirring gently. Spoon mixture into a lightly
greased 2 quart casserole and sprinkle with parmesan cheese
and almonds. Bake the Royal Seafood Casserole uncovered at
350 degrees for 20 minutes or until thoroughly heated. Then
cook 6 inches from heat for 6 minutes or until lightly
browned.
