SEAFOOD SALAD RECIPE
This recipe
will teach you how to make Seafood Salad. It is a quick and
easy recipe to make. This is a seafood dream if you like a
good Seafood Salad. The mixture of prawns, squid hoods and
baby octopus barbecued and then added to the other
ingredients gives you a great Seafood Salad just try it and
see how tasty this recipe is.

Salad Ingredients
100g mesclun
1/3 cup olive oil
500g squid hoods
2 Tbs lemon juice
1 lebanese cucumber
500g cleaned baby octopus
1 kg large uncooked prawns
2 garlic cloves chopped finely
2 Tbs finely chopped lemon rind
2 Tbs chopped fresh flat leaf parsley

Salad Method
Shell and devein prawns but
leave the tail intact then cut squid in half lengthways and
score inside surface of each piece then cut into 5cm wide
strips and remove and discard heads from octopus. Combine
the seafood in a large bowl with 1 tablespoon of the oil, 1
teaspoon of the rind and half of the garlic then cover and
refrigerate for 3 hours. Cook the seafood in batches on a
heated oiled barbecue until prawns are just changed in
colour and squid and octopus are just cooked through. Using
a vegetable peeler slice the cucumber into ribbons then
combine the cucumber with mesclun in a medium bowl. Combine
juice and parsley with remaining oil, rind and garlic in a
screw top jar and shake well. Serve the seafood on the
cucumber mesclun mixture and drizzle the Seafood Salad with
dressing.
