TOFU KEBABS RECIPE
This recipe
will teach you how to make Tofu Kebabs. It is a quick and
easy recipe to make. Tofu Kebabs are a wonderful kebab to
make if you are a vegetarian or have friends that are
vegetarian and if you are having a special dinner or a
barbecue. The flavours of the tofu, red, green and yellow
capsicum, eggplants, squash and then layed on a bed of
rocket leaves and drizzled with the blue cheese dressing is
what makes the taste of this recipe really sensational.
Tofu
Kebabs Ingredients
200g mushrooms
100g baby rocket leaves
8 yellow patty pan squash halved
1 red capsicum chopped coarsely
3 baby eggplants chopped coarsely
1 green capsicum chopped coarsely
1 yellow capsicum chopped coarsely
300g fresh firm silken tofu diced into 3cm pieces
Blue Cheese Dressing:
50g blue cheese
2 Tbs buttermilk
200g plain yogurt
1 Tbs lemon juice
1 clove garlic crushed
1 small onion grated finely
1 Tbs finely chopped chives

Kebabs Method
First thing to do is to
thread the mushrooms, capsicums, eggplant, tofu and squash
alternately onto kebab sticks. Cook kebabs on a heated
lightly oiled grill plate until tofu is browned and
vegetables are just tender. Add all the ingredients for the
blue cheese dressing into a bowl and mix well. Place rocket
leaves onto a serving plate and put the Tofu Kebabs on them
and drizzle with the blue cheese dressing.
