VEGETABLE CHILI CON CARNE RECIPE
This recipe

This Vegetable Chili Con Carne is as good tasting as any
chili con carne. The flavours of the seasoning are a great
taste sensation. And this recipe goes to show that

can just about change any recipe to make a vegetarian meal.
Vegetable Chili Con Carne Ingredients
2 tsp olive oil
2 cups diced celery
2 cups corn kernels
2 green bell peppers
2 cups sliced carrots
8 cloves garlic minced
2 onions finely chopped
2 x 28 oz can tomato puree
2 1/2 cups cooked kidney beans
2 Jalapeno peppers finely chopped
SEASONING:
4 Tbs brown sugar
1 Tbs ground cumin
1/4 tsp ground cloves
1 tsp ground coriander
1/4 tsp ground allspice
1 Tbs mild chili powder
1 Tbs oregano leaves crumbled
Vegetable Chili Con Carne Method
In a large skillet saute the
onion and garlic in the oil until the vegetables are soften.
Add the tomatoes and all the seasoning. Heat the mixture
until it is bubbling and reduce the heat then cover the pan
and simmer for 20 minutes. Add the kidney beans, jalapeno
peppers, green bell peppers, carrots and celery. Simmer the
mixture covered about 20 minutes longer or until the carrots
are soften and then add the corn kernel to the Vegetable
Chili Con Carne and simmer another 5 minutes. I love this
served with noodles.
