VEGETABLE LASAGNA RECIPE
Vegetable Lasagna is the most
tasty lasagna I have ever made and my whole family really
love it. It is a very easy lasagna to make. The flavours of
the vegetables, cheeses and sauce just give this vegetable
lasagna an exceptional taste. It is an easy family meal to
make when your children and grand children are coming over
for a meal.
Vegetable Lasagna Ingredients
1 cup milk
6 Tbs margarine
2 Tbs margarine
1 lb fresh spinach
1 lb carrots sliced
10 lasagna sheets
2 cups tomato sauce
1/2 cup dry white wine
2 cups vegetable broth
1/2 cup onion chopped
1/2 cup all purpose flour
1 cup parmesan cheese
2 cups broccoli flowerets
4 oz swiss and provolone cheese
Vegetable Lasagna Method
In a steamer add the spinach
and steam until tender and then drain and squeeze until
barely moist. Finely chop spinach. Combine chopped spinach,
2 tablespoons margarine, salt and pepper to taste and set
aside. Steam carrots and broccoli until tender. Combine
spinach, carrots and broccoli and set aside. Combine
vegetable broth and milk in a saucepan and cook over medium
heat until warm remove from heat and set aside. In a large
skillet saute chopped onion in 1/4 cup margarine until
tender. Add flour and cook 3 minutes stirring constantly and
then add warm broth mixture and wine and simmer 5 minutes or
until mixture is thickened stirring constantly. Remove from
heat and set aside. In a bowl combine the cheeses together.
In lightly greased 13 x 9
inch baking dish arrange lasagna sheets. Layer 1/4 white
sauce, 1/2 vegetables, 1/3 cheese, then 1/4 white sauce
again. Repeat layers. Spread tomato sauce over top of the
lasagna and sprinkle the lasagna with remaining 1/3 cheese.
Bake the Vegetable Lasagna uncovered at 350 degrees for 35
minutes. Let lasagna stand 10 minutes before serving. My
family all love this Vegetable Lasagna.
