VEGETABLE TAGINE WITH COUSCOUS RECIPE
This recipe
will teach you how to make Vegetable Tagine with Couscous.
It is a quick and easy recipe to make. This recipe is a
wonderful tasting meal. The flavours of onion, pumpkin,
potatoes, chickpeas are just some of the ingredients that go
into making this recipe tasty and then you add the olive and
parsley couscous just gives it that extra add flavour.
Vegetable Tagine with Couscous Ingredients
1 Tbs olive oil
1 red onion sliced thinly
2 cloves crushed garlic
1 tsp dried chili flakes
1 tsp ground coriander
1/2 tsp ground turmeric
1 tsp cumin seeds
500g pumpkin chopped coarsely
2 potatoes chopped coarsely
2 1/2 cups vegetable stock
300g can chickpeas rinsed and drained
1/2 cup coarsely chopped fresh coriander
Olive and Parsley Couscous:
1 1/2 cups vegetable stock
1 1/2 cups couscous
30g butter
1 1/3 cups seeded kalamata olives
1/2 cup coarsely chopped fresh flat leaf parsley
Vegetable Tagine with Couscous Method
Heat oil in a saucepan and
cook the onion, garlic and chili stirring until onion
softens then add spices and seeds and cook stirring until
fragrant. Add pumpkin and potato and stir to coat vegetables
in spice mixture. Stir in stock and bring to boil and then
reduce heat and simmer uncovered about 10 minutes or until
vegetables are tender.
Meanwhile make the olive and parsley couscous by bringing
stock to boil in a medium saucepan then remove from heat and
stir in the couscous and butter then cover and let stand for
5 minutes or until liquid is absorbed, fluffing with fork
occasionally. Stir in olives and parsley. Stir coriander
into tagine and divide couscous among serving plates and top
with vegetable tagine. Serve the Vegetable Tagine with
Couscous and have a good garlic bread with it.
