ZUCCHINI BREAD RECIPE
A loaf of Zucchini Bread who
would ever thought you could mix zucchini with walnuts and
raisin and make such a wonderful loaf. We came from a big
family and my mother used to make a few loaves of the
Zucchini Bread as if the family arrived home as she was
taking them out of the oven 2 or 3 would be eaten with a
cuppa in the afternoon. Just imagine a slice of Zucchini
Bread with butter melting on the top. Make one now and enjoy
it.

Bread Ingredients
3 eggs
1 cup oil
1 1/2 tsp salt
1 tsp vanilla
1/2 cup raisins
1 1/2 cups sugar
3 tsp cinnamon
1 tsp baking soda
1/2 tsp baking powder
2 cups all purpose flour
3 cups shredded zucchini
1/2 cup chopped walnuts

Bread Method
The first
thing you must do is grease two small loaf pans. Then sift
together the flour, salt, cinnamon, baking soda and baking
powder. Take a large bowl and add the oil, eggs, vanilla and
sugar and mix together and then stir in the flour mixture
and remaining ingredients. Divide the mixture evenly into
prepared pans. Bake the Zucchini Bread at 350 degrees for 55
minutes or until cake tester comes out clean. Put the
Zucchini Bread on a wire rack to cool and then enjoy it
spread with butter and a cup of coffee.
