ZUCCHINI MUFFINS RECIPE
These Zucchini Muffins are a
wonderful combination of zucchini and raisins and a touch of
cinnamon.They have a flavour all of there own and the
children don't even know it has a veggie in them. The
Zucchini Muffins are good to use for school lunches, if you
prefer you can make the Zucchini Muffins in the small muffin
cups so the children eat it all as sometimes the big one's
are to big for little children. You can also make a few
extra and freeze them for later. Your husband and friends
will also love them. Why not make a few up and invite some
of your friends over for afternoon tea with muffins.They are
sure to enjoy the afternoon.
Zucchini
Muffins Ingredients
1/2 cup all purpose flour
1/2 cup whole wheat flour
1 1/2 cups shredded zucchini
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
4 egg whites
2/3 cup sugar
1/4 cup oil
1/2 tsp vanilla
1/2 cup raisins

Muffins Method
In a
large bowl sift together flours, baking powder, cinnamon,
baking soda and salt. Next thing to do in a large bowl whisk
together egg whites, sugar, oil, and vanilla and then mix in
the dry ingredients until combined. Last thing to do is
gently stir in zucchini and raisins and then spoon mixture
into prepared muffin cups. Bake the Zucchini Muffins at 375
degrees for 20 minutes or until toothpick comes out clean.
After they are cooked and cooled enjoy a cup of tea with
lovely warm Zucchini Muffins.
